Slow Cooker Buffalo Chicken Lettuce Wraps Serves 6 All the flavors you love from Buffalo wings, without all those darn calories—it’s time to get your fingers dirty! I love making shredded Buffalo chicken in the slow cooker because it’s super easy and so versatile. I use leftovers on sandwiches, over salads, as tacos, and in just about anything I can think up. CHICKEN 1 1/2 pounds boneless, skinless chicken breasts 1 medium celery stalk 1/2 medium onion, chopped 1 garlic clove 2 cups low-sodium chicken broth* 1/2 cup cayenne pepper sauce (I like Frank’s RedHot Original), plus more for serving   BLUE CHEESE DRESSING 6 tablespoons low-fat buttermilk 1⁄4 cup light mayonnaise 5 tablespoons crumbled blue cheese 2 tablespoons chopped scallion, white parts only 1⁄8 teaspoon garlic powder 1⁄8 teaspoon onion powder   1⁄8 teaspoon dried parsley flakes 1⁄8 teaspoon kosher salt Freshly ground black pepper 12 outer lettuce leaves, such as green leaf, red leaf, or iceberg 3⁄4 cup shredded carrots *Read the label to be sure this product is gluten-free. 1. For the chicken: In a slow cooker, arrange the chicken, celery, onion, and garlic. Pour in enough broth to cover the chicken (add water if the broth isn’t enough). 2. Cover and cook on high for 2 hours or on low for 4 hours, until the chicken is cooked through. 3. Remove the chicken from the slow cooker and discard the liquid and vegetables. Shred the chicken with 2 forks and return it to the slow cooker. Add the hot sauce and cook on high for 30 minutes. 4. Place a generous 1⁄4 cup chicken on each leaf, top each with 1 tablespoon shredded carrots, 1 tablespoon celery, and 1 tablespoon of the dressing. Love love love All her meals are delicious!! I love the slow cooker because it's easy to set up and make great meals with little effort. I've lost 30 lbs doing exclusively her recipes and weight watchers. Highly recommend this book. I bought a copy for myself, my mom, and sisterDelicious recipes but not really slow cooker friendly Pros: The recipes I've tried have all been very good. My kids have liked them too. The photographs are beautiful and the nutritional content is listed for all of the recipes. They are coded for various attributes, such as gluten-free or freezer-friendly. I often make a double recipe and put half on my freezer, so I appreciate knowing which ones freeze well.Cons: There are recipes that I will never use, including a whole chapter on breakfast and toast. Many of the recipes use unusual ingredients--and a small amount of them--so there is always either a bottle of something in my pantry that I will never use again, or a bunch of partial ingredients that will spoil before I find another recipe for them. But my biggest complaint is that the slow cooker recipes are almost in name only. They require lengthy preparation, such as pre-cooking the meat or vegetables. Some require attention in the middle of the cooking time, followed by an additional 1-2 hours of cooking. And overall they are supposed to be cooked for odd lengths of time. For example, I'm making the slow cooker spaghetti and meatballs today. I would never have enough time in the morning before work to prepare the meatballs (shred zucchini, roll 24 meatballs) or sauce (pre-cook the garlic), so I had to do it last night. But now I'm faced with instructions to cook on low for 4-5 hours. How am I supposed to do that from work? I could use an outlet timer, but then it will sit on my counter for 5 hours either before or after cooking. I was looking for a slow cooker cookbook which would accommodate how I want to use a slow cooker: throw in the ingredients in 5 minutes, leave for 10 hours, and come home to a finished dinner. This cookbook is not that. However, if you are at home during the day and want to make healthy, delicious meals in your slow cooker, then it would be great for you.This cookbook is amazing! My husband and I pick about 4 meals ... This cookbook is amazing! My husband and I pick about 4 meals a week to make. The grocery list is pretty simple and usually under $100. We always have left overs. The recipes are super easy to make and the ingredients are pretty simple as well. I had a hard time finding a cookbook but I really love this one!

It is a must read for all, and I do not say that lightly. This book is so timely in our culture. In her memoir, Rachael Denhollander recounts her life up to meeting Nassar, his abuse of her, the confusion and pain she experienced as a result of her abuse, and the subsequent fight to bring Nassar to justice for his serial abuse of young women in girls who sought them for medical care. Throughout the book Denhollander weaves in gospel truths, practical principles to support survivors, and warning signs of grooming behavior. Denhollander authentically describes the pain, grief that come as a result of abuse, and she offers hope and the deep healing that can only be found through Jesus Christ.Nassar abused the wrong little girl when he abused Denhollander. She recounts her study of law and the steps she took to face Nassar in court. The process she describes is brutal and long. Reading about her experience as a lawyer who is capable and prepared to report her abuse and face her abuser in court has helped me understand why so few survivors report the abuse they have experienced.As the public face of the Nassar trial and sentencing hearing, Denhollander has developed into a spokesperson and advocate for change in sport and the church with regards to sexual abuse. I had followed the Nassar case after connecting with Jacob Denhollander on Twitter. He shared his wife’s story in the Indy Star article – a victim/survivor who had come forward to stop an evil man who had been abusing children for decades. As I read the articles and watched the news coverage, Rachael came across as so brave, strong, and capable. Her training as an attorney was evident in the clarity and power of her carefully chosen words. But her book reveals what was going on behind the scenes –Would anyone believe her and take this seriously?Was it too late to report?The internal turmoil and re-traumatization of having to retell her abuse.Turning her private journals over to Nassar’s defense team knowing that her abuser would be reading them himself.Waiting to be attacked personally by attempts to rip her reputation to shreds by powerful people in powerful organizations.Wondering if the case would be dismissed and her abuser allowed to continue unchecked.Fearing that this sacrifice was all in vain.This is what it costs a survivor to speak, and the cost is great. My heart ached for Rachael when she struggled to make sense of what happened to her, when she doubted herself, and wrestled with her faith. As I read, there was times when I asked myself, “Where on earth did she get the courage and stamina to do this?” But I think the answer is by the grace and power of God and the love and support of her family. But Rachael has also had more than her fair share of friendly fire. In fact, she and Jacob were pretty much told to stop speaking and posting publicly about child abuse and the SGM situation because if differed from the position their current church leaders were taking. I literally sat in silence for a few minutes digesting that paragraph because I was stunned. What are people really choosing to protect?This is probably the most emotional book review I have ever written. But when it comes to child abuse, maybe we need a little more feeling because our hearts have grown calloused. There’s plenty of outrage for a host of things, but where is the righteous anger against this heinous sin? Perhaps it is because we don’t love the least of these as we should. Perhaps this reveals the state of our love for God. And I wonder what would happen in the church and beyond if we had a fraction of Rachael Denhollander's courage to count the cost and protect the vulnerable within our walls? I pray books like "What is a Girl Worth?" will educate but also challenge the complacency and coldness of our hearts. God have mercy on us.

Short bits of insightfulness I enjoyed this book. A quick read of a compilation of essays. Much like today''s Brief but Spectacular Moment on PBS now.These thoughtful essays are great examples for 500-word College Application Essays, too! It is so difficult to see through the eyes of others, and to have empathy with their differing perspectives. These essays are so very thought-provoking, and it's interesting to see which ones will resonate with people I am closest to. The results are always surprising. This year, we have college application essays due--what a wonderful resource for examples of meaningful, 500-word personal statements!Great Essays, but I wouldn't buy it if I were you. I absolutely love This I Believe. It is one of my favorite radio program, and I think everyone needs to listen to it from time to time. When I saw that my university had chosen this for their "Freshman Connections" book, I was psyched. It really is a magnificent book. Two thumbs way, way up. But don't waste your money on it. Go to thisibelieve.org and listen to the podcasts for free. They're so much more moving that way.

This is THE Book to Get- 153 to a 168 Read this front to back and you won’t need an expensive course. He teaches you how to think about the problems and not just how to do them. I started about 3 months before the LSAT and went from a 153 diagnostic to a 168. I did not take one course and found they would almost offset the progress I made. Really focus and spend an hour a day working as this book suggests. I also listened to as many of the Thinking LSAT podcasts as I could (not affiliated to this book) but I found them to compliment each other extremely well. Your LSAT basically defines your law school opportunities , don’t waste time or resources. I highly recommend this book!!Thanks Mike Kim I got a 174. This book really teaches you to understand the LSAT, and it’s written in a fun and engaging style that makes studying less painful. Excersizes are consistently helpful. Consider using in combination with the Powerscore Bible and/or 7Sage videos if your weakness is logic games like me.This Book Is Better Than The Bibles I should have bought this book first. Basically all the Powersource books into one.
